Ingredients for Sheet-pan grilled cheese
90 ml mayonnaise
12 slices soft white sandwich bread
360 g coarsely grated cheese (such as Monterey Jack, cheddar, mozzarella, or a mix; about 340 g)
kosher salt, freshly ground black pepper
2 (33 x 46 cm) rimmed baking sheets
How to make Sheet-pan grilled cheese
Position a rimmed baking tray on a rack in the middle of the oven and preheat to 230°C.
Spread approximately 7.5 g of mayonnaise on one side of each slice of bread.
Arrange 6 slices of bread, mayonnaise side down, on a second inverted rimmed baking tray.
Mound 125 g of cheese in the centre of each slice, season with salt and pepper, and top with the remaining slices of bread, mayonnaise side up.
Using oven mitts, carefully remove the preheated baking tray from the oven and place it, rimmed side up, on top of the sandwiches.
Hold both rimmed baking trays together and return them to the oven.
Bake for 15 minutes, or until the bread is browned and the cheese is melted.
Carefully remove the baking trays from the oven and transfer the sandwiches to a cutting board.
Cut the sandwiches into pieces and serve.
