Grilled Halibut with Basil-Shallot Butter

This grilled halibut with basil-shallot butter is a sophisticated yet simple way to enjoy fresh white fish. The recipe highlights the delicate flavour of the halibut, which is grilled until perfectly tender and opaque. By topping the hot fillets with a homemade herb butter, you create a silky sauce that melts instantly, infusing the dish with the aromatic scent of fresh basil and zesty lemon peel. The butter adds a rich, savoury depth that perfectly complements the lean, meaty texture of the fish.

As a diabetes-friendly main course, this dish is naturally low in carbohydrates and rich in high-quality protein. It is an excellent choice for a light summer dinner or a healthy midweek meal that doesn't compromise on flavour. Serve the fish alongside steamed seasonal greens or a crisp garden salad for a balanced, nutritious, and thoroughly delicious supper that feels like a restaurant luxury at home.

  • 1 1/2 cups (loosely packed) fresh basil leaves

  • 1 large shallot, coarsely chopped

  • 8 tablespoons (110g ) unsalted butter, room temperature

  • 1 teaspoon grated lemon peel

  • 170g halibut fillets

How to make Grilled Halibut with Basil-Shallot Butter

Finely chop basil and shallot in mini food processor. Add butter, 2 tablespoons at a time, and process until blended, stopping occasionally to scrape down sides. Transfer to small bowl; stir in lemon peel and season basil-shallot butter with salt.

Prepare barbecue (medium heat). Rub fish fillets on both sides with olive oil. Grill until fillets are just opaque in centre, about 4 minutes per side. Transfer fish to plates. Immediately spread some basil-shallot butter over fish. Serve, passing additional basilshallot butter alongside.
