Grilled Skirt Steaks with Parsley Oregano Sauce

This grilled skirt steak with parsley oregano sauce is a vibrant, protein-rich dish that delivers punchy Mediterranean flavours with minimal effort. Skirt steak is an excellent choice for quick high-heat cooking, offering a robust, savoury depth that pairs beautifully with the zesty, herb-forward dressing. The sauce, inspired by a classic chimichurri, uses fresh lime and dried oregano to cut through the richness of the beef, creating a balanced and colourful plate.

As a diabetes-friendly main course, this recipe focuses on lean protein and heart-healthy fats from olive oil, making it both nourishing and satisfying. It is perfect for a quick midweek dinner or a casual weekend gathering when cooked on an indoor grill pan or an outdoor barbecue. Serve it alongside roasted Mediterranean vegetables or a crisp green salad for a complete, wholesome meal.

  • 1 (1/2-pound) skirt steak, cut crosswise into 4 pieces

  • 1 cup coarsely chopped flat-leaf parsley

  • 2 large garlic cloves

  • 2 teaspoons dried oregano

How to make Grilled Skirt Steaks with Parsley Oregano Sauce

Heat grill pan over medium-high heat until hot, then lightly oil. Pat steaks dry and sprinkle all over with 1 teaspoon salt and 1/4 teaspoons black pepper (total).

Grill steaks, turning over occasionally, 2 to 8 minutes total for medium-rare (depending on thickness of meat). Transfer to a platter and let stand 5 minutes.

While steaks are grilling, purée remaining ingredients with 3/4 teaspoons salt in a blender until smooth.

Serve steaks with sauce.
