Roast Beef with Spring onion-Caper Green Sauce

This elegant roast beef with spring onion-caper green sauce offers a vibrant, modern twist on the classic Sunday roast. By pairing a lean cut of beef with a fresh, herb-driven condiment rather than a heavy gravy, this dish highlights the natural savoury flavours of the meat. The zesty sauce, packed with flat-leaf parsley and salty capers, provides a sharp contrast to the rich beef, creating a balanced and sophisticated main course that is naturally low in carbohydrates.

Designed as a diabetes-friendly option, this recipe focuses on high-quality protein and heart-healthy fats from the olive oil. It is an excellent choice for a nutritious family dinner or a weekend gathering. For a complete healthy meal, serve the thinly sliced beef alongside roasted Mediterranean vegetables or a crisp seasonal salad. The sauce can even be made a little in advance to let the flavours develop.

  • 1 cup coarsely chopped fresh flat-leaf parsley

How to make Roast Beef with Spring onion-Caper Green Sauce

Put oven rack in middle position and preheat oven to 260°C.

Pat roast dry and sprinkle all over with 2 teaspoons salt and 1/2 teaspoons black pepper.

Roast, fat side up, in a roasting pan 15 minutes. Reduce oven temperature to 163°C and continue to roast until thermometer inserted into centre of meat registers 49°C, 35 to 45 minutes more. Transfer roast to a cutting board and let stand, uncovered, 15 minutes.

While roast stands, stir together remaining ingredients, a slightly rounded 1/4 teaspoons black pepper, and a pinch of salt.

Thinly slice meat across the grain and serve with sauce.
