This vibrant turkey chopped salad with spicy avocado dressing is a fantastic way to use leftover poultry while prioritising fresh, seasonal produce. The star of the show is the creamy dressing, which combines heart-healthy avocado with a punchy kick of chilli and lime. With the added crunch of jicama and red pepper, every bite offers a satisfying contrast of textures that feels both indulgent and nourishing.
As a diabetes-friendly main, this dish is naturally low in refined carbohydrates and high in lean protein and fibre. It makes for an excellent light lunch or a quick weekday dinner that doesn't compromise on flavour.
