This cheesy chicken enchilada skillet is a fantastic high-protein dinner that delivers all the vibrant flavours of traditional Mexican cuisine with minimal washing up. By using a single ovenproof frying pan and shop-bought rotisserie chicken, you can transform simple pantry staples like black beans and salsa into a comforting, bubbling bake in less than twenty minutes. The corn tortillas soak up the savoury sauce and soured cream, creating a texture that is both satisfying and rich.
Ideal for busy weeknights or a nutritious post-workout meal, this recipe is easily customised to suit your taste. Serve it at the centre of the table with plenty of cooling soured cream, fiery pickled jalapeños, and fresh coriander. It is a reliable, crowd-pleasing dish that proves healthy, protein-rich cooking can be both effortless and deeply flavourful.

Preheat oven to 260°C. Heat oil in a 10" heatproof skillet over medium. Add onion, garlic, cumin, and salt and cook, stirring, until softened, about 5 minutes.
Transfer onion mixture to a large bowl; reserve hot skillet. Add salsa, 120ml soured cream, and 60ml water to onion mixture and stir to combine. Fold in tortillas, chicken, and beans until thoroughly coated. Return mixture to reserved skillet and cook over medium heat until warmed through, about 3 minutes. Sprinkle cheese over.
