Cold Rice Noodle Salad With Chicken, Herbs, and Cucumbers

This vibrant chicken and herb rice noodle salad is a refreshing high-protein dish that is perfect for light lunches or a quick evening meal. Combining succulent shredded chicken with the crunch of fresh cucumbers and a fragrant trio of basil, mint, and coriander, it offers a sophisticated balance of textures. The savoury dressing, lifted by zesty lime and a hint of chilli heat, brings a bright Southeast Asian influence to the table.

Ideal for meal prep, this versatile salad can be made in advance and kept in the fridge, allowing the aromatic flavours to develop further. As it is naturally gluten-free when using tamari, it serves as a healthy, homemade alternative to takeaway options. Serve it chilled on a warm afternoon for a nutritious and cooling dinner that feels both satisfying and light.
