These mustard-seed-crusted burgers offer a sophisticated twist on a classic high-protein favourite. The addition of crushed yellow mustard seeds provides a unique toasted crunch and a subtle heat that perfectly complements the rich minced beef. By searing the seeds directly onto the patties, you create a textured crust that elevates the humble burger into something truly special for a weekend treat or a filling dinner.
To balance the savoury depth of the meat, the burgers are topped with a crisp iceberg lettuce slaw bound in a sharp horseradish and soured cream dressing. This provides a refreshing, zesty contrast that cuts through the richness. Served in toasted rolls, this dish is an excellent choice for those seeking a satisfying, protein-packed meal that is easy to prepare yet feels distinctively gourmet.

120ml soured cream
45ml prepared horseradish
600g beef mince
35g yellow mustard seeds, coarsely crushed

How to make Mustard-Seed-Crusted Burgers with Horseradish Slaw
Whisk mayonnaise, soured cream, and horseradish in medium bowl to blend. Season with salt and pepper. Form beef mince into four 150g burgers, each about 3 3/4 inches in diameter and 1/2 inch thick. Sprinkle both sides of burgers with salt and pepper. Spread mustard seeds on small plate. Press both sides of burgers firmly into mustard seeds.
Heat vegetable oil in heavy large skillet over medium-high heat. Add burgers and cook until brown on both sides and pink in centre, about 4 minutes per side. Arrange roll bottoms on each of 4 plates. Transfer burgers to roll bottoms. Stir lettuce into horseradish mixture to coat. Divide lettuce mixture atop hamburgers. Cover each burger with roll top and serve.
