Turkey Meatloaf with Mushrooms and Herbs

This savoury turkey meatloaf with mushrooms and herbs is a lighter, modern take on a classic comfort food favourite. By using a combination of lean turkey mince and breast, this high-protein dish remains incredibly moist, while the addition of earthy button mushrooms and fresh thyme provides an exceptional depth of flavour. The soaked rustic bread ensures a tender texture that holds together perfectly for slicing.

Ideal for a nutritious mid-week dinner or as a healthy meal-prep option, this meatloaf serves as a versatile centrepiece for any meal. Serve thick slices alongside steamed seasonal greens and a dollop of cranberry sauce or a light gravy for a satisfying, low-fat alternative to traditional beef recipes. It is a simple yet sophisticated way to enjoy poultry any night of the week.
