Warm Potato Salad with Bacon

This warm potato salad with bacon offers a comforting twist on a classic side dish, combining tender boiled potatoes with the savoury crunch of salty bacon. Unlike traditional mayonnaise-based versions, this recipe uses a light white-wine vinegar dressing and the rich flavour of rendered bacon fat to create a dish that is deeply satisfying. The addition of fresh chives provides a grassy brightness that balances the smoky notes perfectly.

As a high-protein option, this salad works brilliantly as a filling lunch or a substantial accompaniment to grilled meats and roasted vegetables. It is best served while the potatoes are still slightly warm, allowing them to absorb the dressing for maximum flavour. This simple, homemade dish is an favourite choice for those seeking a rustic, heartier alternative to a standard deli salad.

Ingredients for Warm Potato Salad with Bacon

  • 1.4kg medium boiling potatoes, scrubbed

  • 45ml white-wine vinegar

  • 110g bacon (5 slices)

  • 2 tablespoons olive oil

  • 1/4 cup chopped fresh chives

How to make Warm Potato Salad with Bacon

Cover potatoes generously with cold salted water (1 tablespoon salt for 2.8L water) in a pot and simmer until potatoes are tender, about 30 minutes. Drain potatoes.

When potatoes are cool enough to handle but still warm, peel and cut into 1-inch pieces, then toss with vinegar and 1/2 teaspoons salt in a large bowl.

Cook bacon in oil in a large heavy skillet over medium-low heat, turning occasionally, until crisp. Drain bacon on paper towels, reserving fat in skillet.

Add 60ml hot bacon fat to potatoes and toss. Coarsely crumble bacon on top, then add chives and salt and pepper to taste and toss.
