This vibrant avocado and watercress salad offers a sophisticated blend of peppery leaves and creamy fruit. The star of the dish is the homemade dressing, which uses grated Gala apple and sweet onion to provide a natural, crisp sweetness that perfectly balances the saltiness of the soy sauce. It is a refreshing vegan starter or side dish that brings a bright, clean flavour to any table, especially during the warmer months.
Quick to assemble and naturally healthy, this salad is an excellent choice for a light lunch or as a contemporary accompaniment to grilled mains. The combination of textures makes it feel substantial despite its simplicity, while the hit of rice vinegar ensures every mouthful is palate-cleansing and light.
