This vibrant barley, fennel and beet salad is a wonderful celebration of texture and fresh, earthy flavours. By using golden beetroot specifically, you achieve a beautiful brightness that pairs perfectly with the aniseed notes of thinly sliced fennel. The chewy texture of the pearl barley provides a satisfying base, making this vegan dish substantial enough for a stand-alone lunch or a sophisticated side for a weekend gathering.
Packed with fibre and heart-healthy fats from the toasted almonds and olive oil, this nutritious recipe is as wholesome as it is colourful. The addition of fresh mint and a sharp sherry vinegar dressing lifts the ingredients, ensuring every bite is refreshing. It is a brilliant make-ahead option, as the sturdy vegetables and grains hold their crunch beautifully even after being dressed.
