Cherry Tomato Vinaigrette

This vibrant cherry tomato vinaigrette is a versatile plant-based addition to your kitchen repertoire, offering a fresh alternative to traditional bottled dressings. By gently heating the tomatoes with shallots, the natural sugars caramelise slightly, creating a savoury depth that balances the sharp tang of red wine vinegar. The combination of burst and whole tomatoes provide a lovely chunky texture, while the addition of fresh chives adds a delicate onion-scented finish.

As a healthy vegan condiment, this dressing is wonderful drizzled over roasted Mediterranean vegetables, spooned onto grilled sourdough, or tossed through a warm pearl barley salad. It can be prepared up to two days in advance, making it an excellent option for stress-free entertaining or meal prep. Simply store it in the fridge and bring to room temperature before serving for the best flavour.

Ingredients for Cherry Tomato Vinaigrette

  • 575ml cherry tomatoes

  • 45ml olive oil, divided

  • 1 shallot, finely chopped

  • 1 tablespoon (or more) red wine vinegar

  • Kosher salt, freshly ground pepper

  • 2 tablespoons chopped fresh chives

How to make Cherry Tomato Vinaigrette

Cut half of cherry tomatoes in half. Heat 1 tablespoon oil in a medium saucepan over medium heat. Add shallot and cook, stirring often, until softened, about 4 minutes.

Add halved and whole tomatoes and cook, stirring occasionally, until beginning to release juices, 4-6 minutes. Mash some of tomatoes with a spoon.

Add 1 tablespoon vinegar and remaining 2 tablespoons oil; season with salt and pepper. Serve warm or room temperature; add chives just before serving.

DO AHEAD: Vinaigrette can be made (without chives) 2 days ahead. Cover and chill. Bring to room temperature and stir in chives.
