Chicory and Asian Pear Salad with Membrillo Vinaigrette

This elegant chicory and Asian pear salad is a masterclass in balancing contrasting flavours and textures. The bitterness of the mixed chicory leaves, such as radicchio and frisée, provides the perfect foil for the honey-like sweetness of crisp Asian pears. It is tied together with a unique vinaigrette made from membrillo, a Spanish quince paste that adds a deep, fruity complexity to the dressing.

As a vibrant vegan dish, this salad works beautifully as a light starter or a sophisticated side for a weekend lunch. The Addition of toasted walnuts provides a satisfying crunch and earthy depth, making it a nutritious and heart-healthy choice. Whether you are hosting a dinner party or simply looking for a fresh way to enjoy seasonal produce, this recipe offers a refined take on contemporary plant-based cooking.
