This smoky chipotle tomato salsa is a versatile vegan staple that brings a bold, deep heat to any Mexican-inspired feast. By charring the fresh tomatoes, white onion, and garlic in a dry frying pan, you develop a rich, blackened exterior that translates into a complex, savoury base. The addition of chipotle chillies in adobo sauce provides that signature earthy spice and a hint of sweetness that balances the acidity of the tomatoes perfectly.
Ideal as a healthy dip for corn chips or a vibrant topping for tacos and grilled vegetables, this homemade salsa is far superior to shop-bought alternatives. It is a brilliant make-ahead option, as the flavours continue to meld and intensify as it cools. Simply stir through fresh coriander at the final moment to provide a burst of herbal brightness.
