This recipe for crispy cinnamon roasted chickpeas transforms humble dried pulses into a sophisticated, crunchy snack that balances sweet and savoury notes. By soaking the chickpeas overnight and roasting them until golden, you achieve a satisfying texture that rivals shop-bought crisps or nuts. The aromatic warmth of ground cinnamon combined with a touch of salt makes these an addictive treat for any time of day.
As a versatile vegan snack, these roasted chickpeas are an excellent source of plant-based protein and fibre, making them a healthy choice for lunchboxes or a post-gym boost. Use them to add a delightful crunch to autumn salads, or simply keep a jar on the kitchen counter for guilt-free grazing. They are best enjoyed when cooled completely to ensure maximum crispness.

Ingredients for Crispy Cinnamon Garbanzo Beans
240ml dried garbanzo beans
2 tablespoons vegetable oil
2 tablespoons raw (or regular granulated) sugar
1/2 teaspoons ground cinnamon
1 teaspoon salt
How to make Crispy Cinnamon Garbanzo Beans
Soak the beans overnight in cool water. Drain and pat them dry with paper towels.
Preheat oven to 177°C.
In a bowl, toss the beans with the vegetable oil and sugar.
Spread them in a single layer on an ungreased baking sheet. Roast them in the oven until crunchy and no longer soft in the centres, about 45 minutes. (Stir them a few times to prevent burning.)
Immediately toss the beans in a bowl with the cinnamon and salt. Cool and serve, or store in an airtight container at room temperature for up to a week.
