This vibrant cucumber and radish salad is a masterclass in texture and freshness. Combining the cooling crunch of hothouse cucumbers with the peppery bite of seasonal radishes, it offers a sophisticated flavour profile that is elevated by a zesty shallot vinaigrette. The addition of toasted sliced almonds provides a delightful nuttiness and a crisp finish, while plenty of flat-leaf parsley ensures every mouthful tastes bright and herbaceous.
As a versatile vegan side dish, this recipe is ideal for alfresco dining or as a refreshing accompaniment to grilled proteins. It is naturally light yet satisfying, making it a wonderful option for those seeking a healthy, plant-based addition to their recipe repertoire. Serve it immediately to enjoy the contrast between the crisp vegetables and the warm, toasted nuts.
