This vibrant cucumber, mustard and dill salad is an exceptionally refreshing vegan side dish that brings a crisp, clean flavour to any summer spread. The combination of sharp white-wine vinegar and punchy Dijon mustard creates a sophisticated dressing that perfectly complements the cooling nature of the cucumber. By removing the seeds before slicing, you ensure the salad stays beautifully crunchy rather than becoming watery, allowing the fragrance of the fresh dill to really shine through.
Ideal for serving alongside grilled vegetables or as part of a classic Sunday lunch, this healthy salad is as versatile as it is simple to prepare. It is a fantastic recipe for those looking for a light, low-fat accompaniment that doesn't compromise on taste. Whether you are hosting a garden barbecue or looking for a quick midweek lunch addition, this zingy cucumber salad provides a delightful burst of herbal freshness.
