English Pea Hummus

This vibrant English pea hummus is a seasonal take on a classic dip, swapping traditional chickpeas for sweet, fresh garden peas. By blanching the peas quickly and shocking them in iced water, you achieve a strikingly bright green hue and a clean, crisp flavour. The addition of aromatic mint and delicate chervil provides a sophisticated herbal lift, while plenty of lemon juice keeps the finish light and zesty.

As a naturally vegan and nutrient-rich snack, this dip is perfect for spring entertaining or a healthy afternoon tea. The green garlic offers a milder, more grass-like heat than mature cloves, making it ideal for raw preparations. Serve this smooth purée with colourful vegetable crudités, toasted pitta bread, or seeded crackers for an elegant and wholesome plant-based appetiser.

Ingredients for English Pea Hummus

  • Kosher salt: 240ml , plus 1/2 teaspoons or more to taste

  • 475ml fresh shelled English peas (about 900g unshelled)

  • 1 stalk green garlic, chopped (or 1 small garlic clove, chopped)

  • 2 tablespoons fresh mint leaves

  • 1 tablespoon fresh chervil leaves

  • 2 tablespoons lemon juice

  • 90ml extra virgin olive oil

  • 1/4 teaspoons freshly ground black pepper, plus more to taste

How to make English Pea Hummus

In a large saucepan over high heat, bring 2.8L water and 120ml kosher salt to a boil. Prepare an ice bath of 2.8L water and ice with 120ml kosher salt stirred in until dissolved. Add the shelled English peas to the boiling water and cook until tender, 2 to 4 minutes. When sweet and tender, immediately remove the peas from the boiling water with a slotted spoon and transfer to the ice bath to stop the cooking. Let sit until the peas are fully cooled, 1 to 2 minutes, then drain.

Combine blanched peas, green garlic, mint, chervil, lemon, olive oil, 1/2 teaspoons salt, and the pepper in a food processor and puree until smooth. Taste for seasoning and adjust as needed. Serve with crudités or Crackers.
