This farmstand gazpacho is a vibrant, refreshing celebration of summer produce. This vegan soup relies on high-quality, ripe vegetables to provide a deep, savoury flavour and a wonderful variety of textures. By pulsing half of the ingredients into a coarse purée, you achieve a beautifully thick consistency while still enjoying the crunch of finely diced peppers and cucumber. It is an ideal dish for warm afternoons when you want something light yet satisfying.
As a healthy, low-fat starter or a simple lunch, this chilled Spanish-style soup is incredibly versatile. It is best prepared several hours in advance, allowing the red wine vinegar and extra-virgin olive oil to marinate the vegetables and develop a sophisticated tang. Serve it in chilled bowls with a drizzle of oil or some crusty sourdough bread for a delicious, nutrient-packed meal.
