Gochujang Gazpacho

This vibrant gochujang gazpacho offers a contemporary twist on the classic Spanish chilled soup. By introducing the bold, fermented heat of Korean chilli paste, the natural sweetness of ripe tomatoes and fresh orange juice is beautifully elevated. It is a sophisticated fusion dish that balances umami depth with a refreshing, zesty finish, making it an ideal choice for warm summer evenings or as an impressive dinner party starter.

As a naturally vegan recipe, this soup is packed with fresh antioxidants from raw vegetables, ginger, and garlic. It is incredibly simple to prepare, requiring only a blender and a few minutes of assembly. For the best flavour, allow the gazpacho to chill thoroughly in the fridge before serving, which helps the spicy and herbaceous notes to meld together perfectly.
