This vibrant vegan side dish celebrates the humble onion, transforming red and yellow varieties into succulent, caramelised wedges. By roasting them with a zesty lemon and Dijon mustard dressing, the natural sweetness of the onions is perfectly balanced by the punchy garlic and earthy notes of fresh thyme. It is a simple yet sophisticated way to elevate seasonal produce with minimal effort.
Ideal as a healthy accompaniment to a Sunday roast or tossed through a warm grain salad, these herb-roasted onions are incredibly versatile. The cooking process mellows the sharp bite of the raw bulbs, resulting in a tender texture and golden, charred edges. Serve them warm with a final flourish of fresh coriander to add a bright, aromatic lift to your plate.

Ingredients for Lan Pham's Herbed-Roasted Onions
2 medium red onions
2 medium yellow onions
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
2 garlic cloves, minced
1 tablespoon fresh thyme leaves
3/4 teaspoons kosher salt
1/4 teaspoons freshly ground black pepper
60ml extra virgin olive oil
1 tablespoon chopped fresh coriander
How to make Lan Pham's Herbed-Roasted Onions
Preheat the oven to 204°C. Cut each onion into quarters, keeping the root end still intact so wedges hold together.
In a large bowl, combine the lemon juice, mustard, garlic, thyme, salt, and pepper. Slowly whisk in the olive oil.
Add the onions to the bowl and mix well. Transfer the onions to a baking dish or sheet in a single layer. Bake for 30 to 45 minutes, until tender and browned at the edges. Toss the onions as necessary during cooking to ensure even browning.
Remove onions from the oven and transfer to a serving platter. Sprinkle with the coriander.
