Matzo-Kimchi Pancakes

These vegan kimchi and matzo pancakes offer a brilliant fusion of textures, combining the crispness of traditional matzo with the punchy, fermented heat of Korean kimchi. The crushed matzo acts as a unique binder, absorbing the tangy kimchi juice to ensure every bite is packed with depth. It is a creative way to use up larder staples while introducing a vibrant, savoury kick to your home cooking repertoire.

Perfect as a light lunch or a quick evening snack, these pancakes are naturally plant-based and incredibly simple to prepare. The potato starch ensures a satisfyingly crunchy exterior that contrasts beautifully with the tender, vegetable-packed middle. Serve them hot from the frying pan with a simple soy dipping sauce or a dollop of dairy-free soured cream for a delicious fusion treat.
