This authentic mojo verde is a staple of Canarian cuisine, bringing a burst of fresh, herbaceous flavour to any table. Known for its vibrant green hue and zesty garlic kick, this vegan condiment relies on high-quality extra-virgin olive oil and the sharpness of Sherry vinegar to balance the earthy notes of ground cumin. It is an incredibly versatile sauce that can be whipped up in minutes using a food processor, making it a reliable cupboard staple for adding a punch of brightness to your favourite savoury dishes.
While traditionally served alongside papas arrugadas—the famous salt-crusted wrinkled potatoes—this zingy dressing also works beautifully as a marinade for grilled vegetables or as a dip for crusty bread. Packed with fresh herbs and heart-healthy fats, it offers a nutritious way to elevate simple ingredients. Serve it at room temperature to allow the complex flavours of the garlic and coriander to fully develop.
