Moroccan Spiced Olives

This vibrant vegan snack of Moroccan spiced olives brings a sophisticated touch to any mezze board or drinks party. High-quality green olives are lightly crushed and simmered with aromatic garlic, earthy thyme, and a hint of citrus. The addition of harissa provides a gentle, warming heat that perfectly balances the natural saltiness of the fruit, making these far superior to any shop-bought alternative.

Preparing these olives in advance is essential, as a long marinating time allows the North African spices to deeply penetrate the olives. This easy homemade appetiser is a heart-healthy choice for mindful snacking and pairs beautifully with a crisp white wine or a robust red. Serve them at room temperature to fully enjoy the complex, savoury flavours and silky texture of the olive oil dressing.

Ingredients for Moroccan Spiced Olives

  • 475ml green olives (with pits) in brine (275g), such as picholine or Cerignola, lightly smashed to crack open slightly

  • 4 garlic cloves, sliced

  • 60ml extra-virgin olive oil

  • 2 teaspoons tomato paste

  • 80ml water

  • 2 teaspoons harissa (North African spice paste)

  • 3 (4-to 5-inch) thyme sprigs

  • 2 thin lemon slices

How to make Moroccan Spiced Olives

Cover olives with water in a small saucepan and bring to a boil, then drain.

Cook garlic in oil in a 10-inch heavy skillet over medium heat until garlic is golden, about 2 minutes. Add tomato paste and cook, stirring, 1 minute. Stir in water, harissa, thyme, and olives and simmer briskly, stirring occasionally, until liquid is thickened and coats olives, about 5 minutes. Remove from heat and stir in lemon slices. Transfer to a shallow dish and marinate, chilled, at least 24 hours.
