This vibrant Moroccan vegetable salad is a masterclass in balancing textures and fresh flavours. Combining the crunch of thinly sliced peppers and cucumber with the heartiness of boiled potatoes, it offers a satisfying yet light accompaniment to any Mediterranean-inspired feast. The addition of briny olives and a sharp citrus dressing provides a wonderful depth that elevates these simple garden ingredients into something truly special.
As a naturally vegan dish, this colourful salad is a versatile choice for outdoor dining, summer barbecues, or as a healthy lunch. Preparing it an hour in advance allows the garlic and fresh herbs to infuse the vegetables thoroughly. Serve it chilled alongside crusty flatbreads or as part of a larger mezze spread to bring a bright, zesty touch to your table.

Ingredients for Moroccan Vegetable Salad
1 large cucumber, thinly sliced
2 cold, boiled potatoes, sliced
1 each red, yellow and green peppers, seeded and thinly sliced
100g pitted olives
Salt (optional)
3 garlic cloves, chopped
3 spring onions, sliced or 1 red onion, finely chopped
60ml olive oil
1 tablespoon white wine vinegar
Juice of 1/2 lemon
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped fresh coriander leaves
How to make Moroccan Vegetable Salad
Arrange the cucumber, potato and pepper slices, and the pitted olives on a serving plate or in a dish.
Season with salt, if you like. (Olives tend to be very salty so you may not wish to add any extra salt.)
Sprinkle the garlic, onions, olive oil, vinegar, and lemon juice over the salad. Chill for at least 1 hour. Before serving, sprinkle with the chopped mint leaves and coriander leaves.
