This homemade onion marmalade is a versatile vegan condiment that balances savoury depth with a gentle sweetness. Slow-cooked onions are infused with tangy white wine vinegar and punctuated by the tartness of dried cranberries and the subtle pop of mustard seeds. Unlike shop-bought versions, this version avoids artificial thickeners, resulting in a clean, vibrant flavour profile that complements a wide range of dishes.
Serve this preserve alongside a vegan cheese board, use it to elevate a simple grilled sandwich, or offer it as a sophisticated accompaniment to roasted vegetables. It is an excellent make-ahead recipe for festive entertaining or Sunday lunches, as the flavours develop beautifully when chilled. Packed into a glass jar, it also makes a thoughtful and elegant gift for food-loving friends.
