Parsley, Celery Leaf, and Jicama Salad

This vibrant jicama, parsley, and celery leaf salad is a masterclass in texture and brightness. Combining the crisp, apple-like crunch of jicama with the bold, herbaceous flavours of flat-leaf parsley and delicate celery leaves, it offers a sophisticated alternative to traditional green salads. The zesty lemon and rice vinegar dressing provides a clean, sharp finish that cuts through the earthy notes of the radish sprouts.

As a versatile vegan dish, this salad works beautifully as a refreshing side for grilled mains or as a light, palate-cleansing course. It is naturally low in fat and packed with fresh, raw ingredients, making it an excellent choice for those seeking a healthy, nutrient-dense addition to their repertoire. For the best results, serve this salad immediately after tossing to maintain its delicate crunch.
