Pickled Peppers

These homemade pickled peppers are a vibrant addition to any kitchen cupboard, offering a bright, acidic punch that cuts through rich dishes perfectly. This vegan recipe uses a blend of assorted chillies, from mild jalapeños to fiery Thai varieties, preserved in a fragrant brine of garlic, coriander seeds, and black peppercorns. By making your own at home, you can control the heat levels and ensure a much crunchier texture than shop-bought alternatives.

A versatile store-cupboard staple, these peppers are ideal for scattering over loaded nachos, tucking into spicy bean tacos, or garnishing a summer salad. The pickling process only takes a few minutes on the hob, yet it transforms fresh chillies into a tangy condiment that keeps well in the fridge. Serve them as part of a Mexican-inspired feast or give a jar away as a thoughtful, spicy gift.
