Plantain Chips

These homemade plantain crisps are a delightful vegan snack, offering a moreish crunch and a subtle savoury flavour that puts shop-bought varieties to shame. Made from starchy green plantains, they are thinly sliced and fried until perfectly golden, resulting in a light and brittle texture. This simple Caribbean-inspired side dish is a fantastic alternative to traditional potato crisps, providing a satisfyingly salty bite that pairs beautifully with spicy dips or cooling salsas.

Quick to prepare and naturally gluten-free, this recipe is ideal for those seeking a healthier, whole-food appetiser for a gathering or a simple afternoon treat. For the best results, ensure you use firm, green plantains rather than the ripened yellow ones to achieve that signature crispness. Serve them warm in a large bowl and watch them disappear within minutes.

Ingredients for Plantain Chips

  • About 950ml vegetable oil

  • 900g green plantains

  • Equipment: a deep-fat thermometer

  • an adjustable-blade slicer or Y-shaped vegetable peeler

How to make Plantain Chips

Heat 1 inch oil to 191°C in a 4- to 5-quarts heavy pot over medium-high heat.

Meanwhile, cut ends from (unpeeled) plantains, then halve plantains crosswise. Cut a lengthwise slit through peel and discard peel. Cut plantains lengthwise into very thin slices (less than 1/16 inch thick) with slicer.

Fry plantains in batches of 10 to 12 slices, turning frequently, until golden, about 1 minute per batch. Drain on paper towels, immediately seasoning each batch with salt. Return oil to 191°C between batches.
