Roasted Sweet Potato and Black Bean Salad

This roasted sweet potato and black bean salad is a vibrant celebration of texture and colour. The natural sweetness of the caramelised potatoes pairs beautifully with the earthy richness of the beans and the bright acidity of a zesty lime and balsamic dressing. Fresh mint and peppery baby rocket add a layer of sophistication, making this a refreshing choice for a light lunch or a standout side dish at a summer gathering.

As a nutritious vegan option, this salad is packed with plant-based protein and fibre, ensuring a satisfying meal that doesn't feel heavy. It is an excellent choice for meal prep, as the robust flavours develop even further if left to marinate for an hour before serving. Serve it alongside grilled vegetables or enjoyed on its own for a healthy, homemade feast.
