This spicy tomato sauce is a vibrant, plant-based cupboard staple that brings a bold punch of Mediterranean flavour to your kitchen. Inspired by classic Italian cooking, the recipe balances the sweetness of crushed tomatoes with the salty, piquant notes of black olives and capers. A generous pinch of dried red pepper flakes provides a warming heat, making it an excellent vegan option for those who enjoy a savoury kick to their favourite pasta dishes.
Quick to prepare and naturally healthy, this versatile sauce is ideal for a midweek dinner or as a base for roasted vegetables. It is particularly effective when tossed through penne or spaghetti, though it also works beautifully as a dipping sauce for homemade focaccia. You can easily prepare it a day in advance to allow the flavours to develop further before rewarming.

How to make Spicy Tomato Sauce from Giada de Laurentiis's Everyday Italian
In a large skillet, heat the oil over a medium-high flame. When almost smoking, add the onion and garlic and sauté for 3 minutes. Reduce the heat to medium and add the olives, capers, 1/2 teaspoons of salt, and red pepper flakes, and sauté for 1 minute. Add the tomatoes and simmer until reduced slightly, about 20 minutes. Season the sauce with more salt to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)
