Apricots, Yoghurt, and Honey

This simple dish of fresh apricots with yogurt and honey is a quintessential summer treat. By combining the natural tartness of stone fruit with the mellow sweetness of wildflower or lavender honey, you create a refined dessert that celebrates seasonal produce. The addition of toasted pistachios provides a satisfying crunch and a hit of savoury protein, elevating these humble ingredients into a sophisticated finish for any meal.

As a versatile vegetarian recipe, this dish works just as well for a nutritious breakfast or a light afternoon snack as it does for a healthy pudding. If you prefer a more decadent, velvety texture, taking the time to strain the yogurt makes a significant difference. It is an effortless way to enjoy a high-fibre, vitamin-rich treat while keeping things naturally low in refined sugars.

Ingredients for Apricots, Yoghurt, and Honey

  • 1 ripe apricot, halved and pitted

  • 60ml regular plain or Greek yoghurt

  • Honey (try wildflower or lavender)

  • 1 tablespoon unsalted roasted pistachios, roughly chopped

How to make Apricots, Yoghurt, and Honey

  1. Top each apricot half with 2 tablespoons of the yoghurt, drizzle with the honey, sprinkle with the pistachios, and serve.

  2. While it's not necessary, if you want to give your plain (i.e., non-Greek) yoghurt a thicker consistency, line a sieve with a paper coffee filter and set it over a bowl. Empty an 230g container into the sieve, cover it loosely with plastic wrap, and place it in the refrigerator for at least 6 hours.
