Asiago-Pepper Frico

This simple Asiago and black pepper frico recipe transforms a handful of ingredients into incredibly crisp, golden wafers. These savoury Italian-style cheese crisps offer a sophisticated bite, with the sharp, nutty flavour of the Asiago balanced by the gentle heat of black pepper and a pinch of cayenne. They are naturally gluten-free and provide a satisfyingly brittle texture that makes them an irresistible snack to serve with evening drinks.

As a versatile vegetarian garnish, these fricos can be used to add a salty crunch to creamy soups or garden salads. This homemade version is far superior to shop-bought alternatives and can be prepared a day in advance for easy entertaining. Simply store them in an airtight container at room temperature to maintain their delicate, crunchy finish.
