This simple Asiago and black pepper frico recipe transforms a handful of ingredients into incredibly crisp, golden wafers. These savoury Italian-style cheese crisps offer a sophisticated bite, with the sharp, nutty flavour of the Asiago balanced by the gentle heat of black pepper and a pinch of cayenne. They are naturally gluten-free and provide a satisfyingly brittle texture that makes them an irresistible snack to serve with evening drinks.
As a versatile vegetarian garnish, these fricos can be used to add a salty crunch to creamy soups or garden salads. This homemade version is far superior to shop-bought alternatives and can be prepared a day in advance for easy entertaining. Simply store them in an airtight container at room temperature to maintain their delicate, crunchy finish.

1/2 teaspoons freshly ground black pepper
1/8 teaspoons cayenne pepper
How to make Asiago-Pepper Frico
Preheat oven to 177°C. Line 2 large baking sheets with parchment paper. Mix cheese, black pepper, and cayenne in small bowl. Bake frico until deep golden and crisp, about 12 minutes. Remove from oven. Slide parchment with frico onto work surface and cool 5 minutes. Slide thin metal spatula under frico to loosen. Cool frico completely on parchment.
Frico can be prepared 1 day ahead. Store airtight in single layer at room temperature.
