Burricotti with Chestnut Honey and Candied Spicy Walnuts

This sophisticated vegetarian starter brings together a beautiful balance of bitter, sweet, and savoury notes. The star of the dish is burricotti—a luxurious blend of creamy ricotta and buttery burrata—which pairs perfectly with the deep, slightly smoky flavour of chestnut honey and the crunch of spiced nuts. It is an elegant assembly that feels contemporary and refined, yet requires very little time at the stove.

Served on wholesome whole wheat crackers, these bites are excellent for autumnal entertaining or as a light lunch accompaniment. The radicchio is briefly wilted in balsamic vinegar to soften its bite, providing a vibrant purple base for the rich cheese. Ingredients for Burricotti with Chestnut Honey and Candied Spicy Walnuts

  • 20ml balsamic vinegar

  • 4 medium-size radicchio leaves

  • 8 thick whole wheat crackers (round work best)

  • 240ml burricotti* or fresh whole-milk ricotta cheese (about 200g )

  • 20ml chestnut honey or buckwheat honey

  • 16 Candied Spicy Walnuts

  • 8 whole, 8 chopped

How to make Burricotti with Chestnut Honey and Candied Spicy Walnuts

Heat vinegar in large nonstick skillet over medium-high heat. Working in 2 batches if necessary, add radicchio leaves; flatten with spatula and cook until softened, about 30 seconds per side. Transfer to plate to cool. Tear each leaf in half.

Place 2 crackers on each of 4 plates. Top each cracker with 1 radicchio leaf half. Spoon 2 tablespoons cheese atop radicchio on each cracker; drizzle 1/2 teaspoons honey over each. Top each with 1 Candied Spicy Walnut half. Sprinkle chopped candied walnuts over and serve.
