This authentic Colombian avocado salsa, known locally as ají de aguacate, is a bright and zingy vegetarian condiment that brings a burst of South American flavour to any meal. Unlike a creamy guacamole, this salsa has a refreshing tang thanks to the white vinegar base and a unique texture provided by the addition of chopped hard-boiled eggs. The combination of spicy habanero, fresh coriander and creamy avocado creates a beautifully balanced sauce that is both sharp and satisfying.
Perfect as a versatile dip or a topping, this homemade salsa is traditionally served alongside golden empanadas or grilled meats. It is an excellent choice for those seeking a healthy, dairy-free topping that doesn't compromise on heat or zest. Simply prepare the fresh vegetables, blend the base and stir everything together for a quick, impressive accompaniment that elevates simple grilled dishes or afternoon snacks.
