Green Goddess Crunch Sandwich

This vibrant green goddess crunch sandwich is a celebration of fresh, herbaceous flavours and satisfying textures. A vegetarian lunch staple, it features a creamy, homemade dressing made with fresh basil and chives, which doubles as a punchy spread for the malted grain bread. The combination of silky avocado, creamy mozzarella, and crisp cucumber ensures every bite is balanced, while the addition of lemon zest provides a bright, citrusy lift that cuts through the richness of the Greek yoghurt and mayonnaise.

Perfect for a quick weekday meal or a sophisticated picnic main, this nutrient-dense sandwich is packed with healthy fats and crisp spring vegetables. For the best results, use high-quality multigrain bread that can stand up to the generous layers of filling and dressing. If you fancy an extra kick of heat, a pinch of dried chilli flakes over the avocado works beautifully to complement the cooling herbs and fresh sprouts.
