Margherita Pizza with Rocket

This vibrant Margherita pizza with rocket offers a sophisticated twist on the classic Italian favourite. By using fresh plum tomatoes, aromatic basil, and a savoury blend of Romano and fontina cheeses, you create a base that is both rich and deeply satisfying. The addition of dressed rocket after cooking provides a peppery crunch and a bright acidity that perfectly balances the melted cheese and garlicky tomato sauce.

Ideal for a light vegetarian supper or an al fresco weekend lunch, this recipe utilises a grilled crust for an authentic, smoky finish. It is remarkably quick to assemble, making it a brilliant option for those seeking a nutritious, homemade alternative to shop-bought pizzas. Serve immediately while the base is crisp and the cheese is beautifully gooey.
