This elegant vegetarian side dish elevates the simple potato into something truly special. By steaming small red potatoes until tender and tossing them in a fragrant saffron butter, you create a dish that is as visually striking as it is delicious. The delicate floral notes of the saffron threads provide a luxurious depth of flavour, while the fresh green parsley adds a bright, herbal finish that perfectly balances the richness of the melted butter.
Ideal for a Sunday roast or as an accompaniment to a Mediterranean-style feast, these saffron potatoes are naturally gluten-free and incredibly simple to prepare. Using a frying pan to finish the dish ensures the potatoes are evenly glazed, giving them a beautiful golden hue. Serve them alongside roasted vegetables or a crisp seasonal salad for a light yet comforting meal that feels sophisticated.
