Potatoes with Cheese Sauce (Papas a la Huancaína)

This classic Papas a la Huancaína is a vibrant Peruvian vegetarian dish that brings a burst of South American sunshine to your table. The heart of the recipe is a velvety, golden sauce made from ají amarillo chillies and salty cheese, providing a mildly spicy kick that pairs perfectly with tender, earthy potatoes. It is a wonderfully simple yet sophisticated starter that celebrates the humble potato, elevated by the creamy texture and punchy flavours of the traditional sauce.

Ideal for sharing at a casual lunch or serving as an elegant side dish, these cheesy potatoes are traditionally garnished with salty olives and a squeeze of fresh lime to cut through the richness. Whether you use Peruvian purple potatoes or buttery Yukon Golds, this homemade version is a refreshing and comforting addition to any vegetarian menu. For the best experience, serve with a crisp, chilled Sauvignon Blanc.

How to make Potatoes with Cheese Sauce (Papas a la Huancaína)

Cover potatoes with water in a medium pot and season well with salt, then briskly simmer, covered, until just cooked through, about 20 minutes. Drain and cool, then peel.

Meanwhile, mince and mash garlic to a paste with a pinch of salt, then blend with remaining ingredients in a blender until very smooth and thicker than double cream (if necessary, thin with milk). Season with salt.

Cut potatoes crosswise into 1/4-inch-thick slices.

Spoon some sauce onto 8 small plates, then top with sliced potatoes. Serve remaining sauce on the side.
