This elegant spinach and leek gratin offers a sophisticated twist on traditional comfort food. The earthy sweetness of softened leeks and fresh spinach is elevated by a gentle heat from horseradish mustard, creating a rich and velvety savoury base. What truly sets this vegetarian dish apart is the indulgent Roquefort crumb topping, which provides a sharp, salty contrast to the double cream sauce and a satisfyingly golden crunch.
Ideal for entertaining, this vibrant green side dish pairs beautifully with a celebratory roast or can be served as a luxurious light lunch alongside some crusty sourdough bread. By using fresh French breadcrumbs and high-quality blue cheese, you achieve a restaurant-style finish that is both wholesome and decedent. It is a fantastic way to enjoy seasonal greens in a truly flavourful homemade meal.
