Watermelon and Cucumber Mint Tsatsiki Salad

This vibrant watermelon and cucumber salad with mint tsatsiki is a celebration of summer flavours. Combining the hydrating sweetness of ripe watermelon with the cool crunch of fresh cucumber, it offers a sophisticated twist on traditional Greek flavours. The addition of zesty lime and fragrant garden mint ensures every bite is remarkably refreshing, making it an ideal choice for a light lunch or a colourful side dish for a garden barbecue.

As a nutritious vegetarian option, this salad relies on high-quality Greek-style yoghurt to provide a creamy, protein-rich contrast to the crisp fruit and vegetables.
