This vibrant watermelon, tomato and mint salad is the quintessential summer dish, offering a sophisticated balance of sweet and savoury flavours. By pairing juicy, chilled watermelon with ripe heirloom tomatoes and fragrant mint, you create a refreshing base that beautifully complements the salty punch of crumbled feta. It is a colourful addition to any table, providing a crisp texture and bright finish that cuts through richer grilled foods.
As a versatile vegetarian side, this salad is perfect for sunny garden parties or healthy midweek lunches. The use of sweet onions provides a mild crunch without overpowering the delicate fruit, while the assembly is quick enough for effortless entertaining. Best served immediately after tossing, it is a hydrating and nutritious choice for warm afternoons when you want maximum flavour with minimal time spent in the kitchen.
