This vibrant winter salad with lemon-yoghurt dressing is the perfect antidote to the heavy, rich dishes often associated with the colder months. Combining crisp romaine lettuce with earthy kohlrabi, sweet carrots, and buttery avocado, it offers a refreshing variety of textures. The creamy dressing, brightened with fresh lemon and parsley, ties the ingredients together for a light yet satisfying vegetarian meal that celebrates seasonal produce.
Packed with fibre-rich chickpeas and crunchy roasted sunflower seeds, this nutritious dish works beautifully as a standalone lunch or a zesty side for roasted meats. The addition of Kalamata olives and radishes provides a savoury, peppery finish that keeps every bite interesting. This is an excellent way to use store-cupboard staples alongside fresh market finds for a quick, healthy homemade dinner.
