These crispy coconut prawns offer a delightful tropical flavour combined with a satisfyingly crunchy texture. By using unsweetened coconut and coconut flour, this recipe provides a sophisticated, low-carb alternative to traditional breaded seafood. The prawns are oven-baked rather than deep-fried, ensuring they remain light and nutritious while still achieving a beautiful golden finish that pairs perfectly with a fresh lime garnish or a spicy dipping sauce.
As a diabetes-friendly dish, this recipe focuses on high-quality protein and healthy fats without the need for refined grains or hidden sugars. It makes an excellent starter for a summer dinner party or a quick, healthy weeknight main when served alongside a crisp green salad or steamed seasonal vegetables. It is a versatile choice for anyone seeking a wholesome, gluten-free meal that does not compromise on savoury appeal.
