Turkey Sausage Patties

This recipe for spiced turkey sausage patties offers a lean and flavourful alternative to traditional pork sausages. These homemade patties are seasoned with a fragrant blend of nutmeg, cinnamon, and a hint of cayenne pepper, providing a warm, savoury finish that pairs beautifully with the succulent dark-meat turkey. By using fresh breadcrumbs and egg yolks, the texture remains exceptionally moist and tender during the frying process.

As a diabetes-friendly option, these patties are high in protein and lower in saturated fat than many shop-bought varieties. They are ideal for a healthy weekend brunch or can be prepared in advance for a quick, nutritious breakfast on busy weekday mornings. Serve them alongside poached eggs or a fresh green salad for a balanced and satisfying meal that the whole family will enjoy.

Ingredients for Turkey Sausage Patties

  • 1 small onion, finely chopped

  • 80ml vegetable or olive oil, divided

  • 120ml coarse fresh bread crumbs

  • 45ml milk

  • 900g ground dark-meat turkey

  • 1/4 teaspoons grated nutmeg

  • 1/4 teaspoons cinnamon

  • 1/4 teaspoons cayenne

  • 1/8 teaspoons ground cloves

  • 2 large egg yolks

How to make Turkey Sausage Patties

Preheat oven to 121°C.

Cook onion in 1 tablespoon oil in a 12-inch nonstick skillet over medium heat, stirring occasionally, until golden brown, 6 to 8 minutes. Remove from heat.

Meanwhile, stir together bread crumbs and milk in a large bowl and let stand 5 minutes.

Add onion to crumbs (reserve skillet), then add turkey, nutmeg, cinnamon, cayenne, cloves, yolks, 2 teaspoons salt, and 1 teaspoon black pepper and combine well.

Line a large baking sheet with parchment paper. Form 24 (2-inch-wide) patties (about 1/2 inch thick) with damp hands and arrange on sheet.

Heat 1 tablespoon oil in skillet over medium heat until hot, then cook patties in batches, turning once, until browned and just cooked through, about 8 minutes per batch. Drain briefly on paper towels, then keep warm in a baking pan, loosely covered with foil, in oven. Wipe out skillet and add 1 tablespoon oil between batches.
