This high-protein BLT salad is a sophisticated reimagining of the classic sandwich, offering all the familiar, comforting flavours in a fresh and vibrant bowl. By pan-frying slab bacon until crisp and using the rendered fat to toast homemade thyme-scented croutons, this recipe ensures every mouthful is packed with a deep, savoury depth. The combination of peppery baby rocket and slightly bitter frisée provides a sturdy base that stands up beautifully to the rich dressing and juicy tomatoes.
Perfect as a substantial midweek lunch or a casual weekend dinner, this dish is an excellent choice for those seeking a satisfying, high-protein meal. The addition of fresh chives adds a delicate onion note that cuts through the creaminess of the ranch dressing. For the best results, serve the salad immediately after tossing to ensure the croutons maintain their crunch against the fresh salad leaves.
