Crispy Pancetta, Burrata, and Tomato Sandwiches

This sophisticated high-protein sandwich is a masterclass in contrasting textures and bold Italian flavours. By combining slices of salty, crisp pancetta with the indulgent creaminess of fresh burrata cheese, you create a satisfying meal that feels truly special. The secret lies in marinating the heritage tomatoes in extra-virgin olive oil and fragrant basil, allowing the juices to mingle and form a natural dressing that soaks beautifully into the toasted brioche.

Perfect for an elevated weekend lunch or a stylish midweek meal, these sandwiches offer a vibrant balance of rich cheese and peppery rocket. Using seasonal tomatoes like Costoluto Genovese provides a beautiful aesthetic and deep flavour, while the high protein content from the pancetta and burrata ensures a filling dish that doesn't compromise on quality or taste.
