Ingredients for Jerk Beef on Plantain Chips

  • 1 (4-inch-long) piece centre-cut beef tenderloin

  • 2 teaspoons jerk seasoning paste

  • 1 tablespoon vegetable oil

  • 3 tablespoons cocktail onions, rinsed

  • 1/3 cup packed coriander leaves

  • 24 store-bought plantain chips

How to make Jerk Beef on Plantain Chips

Quarter beef lengthwise and pat dry. Season with 1/4 teaspoons salt and rub jerk paste all over beef.
