Lemon-Scented Chicken Soup with Parsley-Sage Matzo Balls

This zesty lemon chicken soup with parsley-sage matzo balls is a sophisticated take on a classic comfort food. By blanching the chicken and carefully skimming the broth, you achieve a beautifully clear, golden liquid infused with the bright notes of citrus and fresh herbs. The addition of root vegetables like parsnips and sweet potato provides a subtle sweetness that balances the savoury depth of this high-protein dish.

Ideal for a warming family dinner or a restorative weekend lunch, this soup is both light and satisfying. The herby matzo balls add a wonderful texture, making it a complete meal that feels truly homemade. You can even prepare the broth up to two days in advance, allowing the flavours to meld before reheating and serving with fresh lemon slices for a vibrant finish.
